Caramel Apple Upside-Down Cake Parfait



Indulge in the flavors of a caramel apple upside-down cake in parfait form. This delightful dessert layers caramelized apples, vanilla yogurt, and cinnamon granola for a sweet and crunchy treat.

Ingredients:

  • 1 cup diced apples
  • 1/2 cup caramel sauce
  • 1 cup vanilla yogurt
  • 1 cup cinnamon granola
  • 1/4 cup chopped nuts optional
  • Whipped cream for topping

Instructions:

In a pan, saut diced apples until they caramelize, then set aside to cool

Layer the bottom of parfait glasses with a spoonful of caramel sauce

Easy Macaroni Salad



This easy macaroni salad is a perfect addition to any party or gathering. It's creamy, tangy, and packed with colorful veggies for a delightful crunch.

Ingredients:

  • 2 cups macaroni pasta
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced pickles
  • 1/4 cup sliced black olives
  • Salt and pepper to taste
  • Paprika for garnish optional

Instructions:

Follow the directions on the package to cook the macaroni

Take it out and let it cool down

Mix mustard and mayonnaise in a large bowl

Combine well

Put the cold macaroni into the bowl and toss it around to cover it with the dressing

Put the celery, red and green bell peppers, pickles, black olives, and diced red onion in the bowl

Combine everything

Add salt and pepper to the salad as needed

If you want, you can add paprika on top as a garnish

Put the macaroni salad in the fridge for at least an hour before you serve it

Grilled Cajun Shrimp Tacos



Spice up your taco night with these delicious Grilled Cajun Shrimp Tacos. They're packed with flavor and perfect for a quick and satisfying meal.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper any color
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions:

Mix the olive oil and Cajun seasoning in a bowl, then toss the shrimp to coat them all over

Set the grill on medium-high heat and grease the grate

Put the shrimp on skewers that have been seasoned and grill them for two to three minutes on each side, until they turn pink and opaque

For about 30 seconds on each side, warm the flour tortillas on the grill

To make tacos, put some shredded lettuce on each tortilla and then add some grilled Cajun shrimp on top of each one

Add bell pepper, red onion, and tomato dices on top

Put sour cream on top and chopped cilantro on top of that

Serve with wedges of lime to squeeze over the tacos

Easy Chicken Enchilada Soup



This Easy Chicken Enchilada Soup is a tasty and comforting meal that's great for busy weeknights. With soft chicken, beans, corn, and spices, it tastes just like your favorite enchiladas but in soup form!

Ingredients:

  • 1 lb cooked chicken, shredded
  • 1 can 10 oz red enchilada sauce
  • 1 can 14
  • 5 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, avocado slices, sour cream, cilantro

Instructions:

Diced onion and minced garlic should be cooked in a large pot until the onions are soft

Shred the chicken and put it in the pot with diced tomatoes, black beans, corn, chicken broth, cumin, and chili powder

Over medium-low heat, bring the soup to a simmer

Then, lower the heat to low and let it simmer for 20 to 25 minutes, stirring every now and then

Add pepper and salt to taste

You can serve it hot with extras like sour cream, cilantro, shredded cheese, avocado slices, or both
