Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper any color
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
Mix the olive oil and Cajun seasoning in a bowl, then toss the shrimp to coat them all over
Set the grill on medium-high heat and grease the grate
Put the shrimp on skewers that have been seasoned and grill them for two to three minutes on each side, until they turn pink and opaque
For about 30 seconds on each side, warm the flour tortillas on the grill
To make tacos, put some shredded lettuce on each tortilla and then add some grilled Cajun shrimp on top of each one
Add bell pepper, red onion, and tomato dices on top
Put sour cream on top and chopped cilantro on top of that
Serve with wedges of lime to squeeze over the tacos
