This Courgette & Feta Filo Tart combines the delicate flavors of courgette and tangy feta cheese in a light and crispy filo pastry shell. Perfect for a light lunch or dinner!
Ingredients:
- 6 sheets filo pastry
- 3 tbsp olive oil
- 3 medium courgettes, sliced thinly
- 200g feta cheese, crumbled
- 2 eggs
- 150ml double cream
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
Set the oven to 180C 350F and heat it up
Paint the tart pan with olive oil, then put the filo pastry sheets in layers, painting each one with olive oil as you go
Spread out the sliced zucchini on top of the pastry
Put the crumbled feta cheese on top of the zucchini
Mix the eggs, double cream, dried oregano, salt, and pepper in a different bowl using a whisk
Put the egg mix on top of the feta and zucchini
After the oven is hot, bake for 25 to 30 minutes, or until the filling is set and the pastry is golden
Let it cool a bit before cutting it up and serving it
